Clam Chowder

two 6oz cans minced clams
1 c finely minced onions (if using dry onion flakes, use about 4 tbsp)
1 c finely diced celery
2 c diced potatoes

Drain clams (or don't, I don't) and combine with vegetables. Barely cover with water, simmer 20 min. or until tender. While this is cooking, do next step.
Melt 3/4 c butter (1 1/2 cubes) add 3/4 c flour, stir together and add 4 c milk,1 1/2tsp salt, 1/2 tsp sugar, and dash of pepper. Cook to white sauce, stirring constantly. Add cooked vegetables, don't drain. Heat and serve. (My mom cooks the white sauce in the microwave, stirring every two minutes. It boils over quickly this way, so watch it closely)
