Manicotti
I love this recipe because you don't have to cook the noodles beforehand, making them easier to stuff:
1 1/2 lb. (approx.) Mozzarella or Jack cheese, grated
1/2 to 3/4 cup Parmeasan Cheese, grated
2 eggs, beaten
1/2 to 3/4 cup milk
Salt and Pepper to taste
14 manicottie shells (uncooked)
1 bottle spaghetti sauce
Mix together cheese, eggs, milk, salt and pepper until able to handle. Stuff mixture into uncooked shells. Pour part of spaghetti sauce in a 9x13 inch pan. Put shells in; cover with rest of sauce. Add extra water, about 1 cup. Bake at 350, covered, for 1 hour. If it starts to dry off, add more water.

Chicken Enchiladas
4 chicken breasts, cooked and shredded or cubed
2-3 green onions, chopped
3 c grated cheese
2 small cans sliced olives
1 (7 oz) can green chilies
2 cans cream of chicken soup
2 c sour cream (16 oz container)
Mix cream of chicken and sour cream to form sauce. Mix 1/2 c sauce with chicken, chilies, onion, and olives to form filling. Spread tortillas with filling and roll. Place in 9x13 pan. Pour remainder of sauce over enchiladas and sprinkle cheese on top. Bake at 450 deg for 15 min. or until heated through. Do not cover.
My variation:
I leave out the onions, olives and chilies. I replace the cream of chicken with cream of mushroom. And I prefer to use pepperjack cheese. This is a recipe you can adjust to your preferences.

Tuna Cheese Rolls
2 1/4 c bisquick
2/3 c milk
Mix together until soft dough forms. Turn onto surface sprinkled with flour or Bisquick. Knead 10 times. Roll out with rolling pin until about 1/8 in. thick. Sprinkle drained can of tuna fish over (Dan and I use canned chicken instead). Roll up and then cut with string to slices about 3/4 inch thick. Bake for 8-10 min.
While baking, make cheese sauce:
1/2 cube margarine
1/4 c flour
2 c milk
Melt margarine in mocrowave about 30 seconds. Add flour and stir until smooth. Cook in mocrowave for 45 seconds. Then add milk. Microwave and stir every 2 min. until thick. This takes 8-10 min. Then add grated cheese (about 1 cup, but until it looks good). Make sure cheese is melted.
To serve, put rolls on plate and pour cheese sauce over the top.
