Orange Kissed Cookies

Recipe from Allrecipes.com

1 c. white sugar
1/2 c. butter-flavored shortening
1 egg
1/2 c. sour cream
1/2 tsp. vanilla extract
2 1/2 c. all-purpose flour (add another 2 tablespoons for high altitudes)
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/4 c. + 2 Tbsp. thawed orange juice concentrate
1 Tbsp. grated orange zest

Frosting
1 tsp. grated orange zest
1/4 c. thawed orange juice concentrate
1/2 c. softened butter
3 c. powdered sugar
2-3 drops orange food coloring (optional)

Preheat oven to 375.

In a medium bowl, combine the flour, baking powder, baking soda, and salt. Set aside.

In a large mixing bowl or the bowl of a mixer, combine the white sugar and shortening. Beat until well-combined. Add the egg and beat well, then add the sour cream and vanilla and beat for about 1 minute or until the mixture is light and fluffy. Add the flour mixture and beat until combined. Add the orange juice concentrate and orange rind and mix well.

Using a cookie scoop (or pastry bag), drop the dough/batter (the mixture will be VERY moist–thicker than a cake batter but thinner than traditional cookies) by the tablespoon-ful onto a lined, un-greased baking sheet. Bake for 10 minutes or until the cookies are set and just starting to turn golden brown around the edges. Remove from the oven and allow to cool for 5 minutes, then transfer to a wire cooling rack and cool completely.

For the frosting, combine the frosting ingredients with an electric mixer until light and fluffy. Pipe or spread over the cooled cookies.

Yield: Approximately 36 cookies

Gingerbread Cookies

1 cup unsalted butter
1/2 cup brown sugar
1/2 cup honey
1/2 cup molasses
1 egg
5 cups flour (can do half whole wheat)
1 1/2 teaspoons baking soda
1 tsp. cinnamon
1 tsp. ginger
1 tsp. salt
1 cup raisins, chopped (can sub mini chocolate chips or other dried fruit)

Cream butter and sugar until light and fluffy. Add the egg and beat well. With mixer running on low, slowly add the honey and molasses. Beat well.

Whisk together the dry ingredients. Add a cup at a time to the creamed mixture.

Scrape the sides and bottom of the mixing bowl to make sure there isn’t any flour left. Add the raisins. Transfer the dough to an airtight container or large Ziploc bag. Chill until very cold–about 4 hours or overnight.



Roll dough out on a lightly floured surface and cut with cookie cutters.

Bake cookies on parchment-lined baking sheets at 375 degrees F for 6-7 minutes (shorter for smaller cookies, longer for larger cookies) or until cookies are firm to the touch and lightly golden. (If you like crisp cookies, bake for longer.)

Decorate as desired.



Frosting
1/2 cup butter
3 cups powdered sugar
1/2 cup half and half

Beat until fluffy. Tint with food coloring. Store in the fridge until ready to use. Let come to room temperature before decorating cookies.

Chelsea's cookies

3 1/2 cups flour
1 1/2 tsp baking soda
1/2 tsp salt
2 sticks of butter
1 cup sugar
1 cup brown sugar
2 eggs 2 tsp vanilla

mix flour, baking soda, and salt. set aside. mix butter (soften for 20 sec) and sugars until creamed, then add eggs and vanilla. slowly mix in the flour mixture then add a bag of chocolate chips.
make little about 1 in balls and bake on 375 for 12 min or until the peaks on the cookies brown

Chocolate Revel Bars (Grandma Johnson)

a.k.a. The Best Cookies on the Planet!

Step one:
1 c margarine
2 c brown sugar
2 eggs
1 tsp vanilla
2 1/2 c flour
2 tsp soda
1 tsp salt
3 c oats

Step two:
12 oz chocolate chips
1 can sweetened condensed milk
1 tsp vanilla
2 tbsp salt
1 c nuts (optional)

Mix together all ingredients in step one, set aside. Melt chips, milk and butter. When smooth and nuts and vanilla. Spread 2/3 oatmeal mixture in bottom of 9x13 pan. Cover with chocolate mixture. Dot remaining oatmeal mixture on top. Bake at 350 deg for 20-30 min. (usually right around 25 min.) or until brown.

Pumpkin Cookies

1/2 c margarine
1 c sugar
1 egg
1 tsp vanilla
1/2 c cooked pumpkin (or get it from a can)
1 3/4 c flour
1/4 tsp salt
1 tsp baking soda
1 tsp cinnamon
1/2 tsp ground ginger
3/4 tsp nutmeg
1/4 tsp cloves
*optional: raisins, nuts, choc. chips, or butterscotch chips

Cream margarine in large bowl. Gradually add sugar and continue mixing until all sugar is creamed into margarine. Add egg and vanilla. Stir until well blended. Sift flour with salt, soda, and spices. Add to margarine mixture and blend. If desired, add nuts or raisins, and mix into dough. Drop by teaspoonfuls on cookie sheet. Bake at 375 deg. for 12-15 min.
Makes 2-3 dozen

Homemade Oreos

1 devil's food cake mix
1/2 c shortening
2 eggs

Mix ingredients together. Roll dough into dime-size balls and place on cookie sheet. Bake at 350 deg for 8 min. cool.

Frosting:
8 oz cream cheese
1/2 cube butter
2 tsp vanilla
2-4 c powdered sugar

Mix until smooth. frost backs of cookies and put 2 together.
(I cheat and use pre-made frosting)

Chocolate Chip Cookies

Blend:
1 1/2 c sugar
1 1/2 c brown sugar
1 c salad oil
1/2 c shortening
1/2 c butter
Then add:
3 eggs
3 tsp (or 1 tbsp) vanilla
Then Add:
2 tsp soda
2 tsp salt
4 c flour
3 c oats
1 pkg choc. chips
and nuts if desired
Bake at 350 deg about 10 min. or until done

No Bake Cookies

Mix in saucepan:
3 tbsp cocoa
2 c sugar(it helps to mix these two first)
add 1 c milk
1 cube butter

Cook until it boils, then cook for 2 min.
Remove from heat and add 2 1/2 c oats and 1/2 c peanut butter. Stir and drop onto plastic wrap covered cookie sheets. Refrigerate until hard.

Peppermint Candy Christmas Cookie

Candy Mix:
Mix together 1/2 c crushed candy canes (mint) and 1/2 c powdered sugar and set this aside.

Cookie Mix:
Cream together 1 c butter or margarine, 1/2 c sifted powdered sugar.
Add:
1 tsp vanilla
2 1/2 c flour (add gradually)
1/2 c nuts (optional)

Form into small balls and place on a lightly greased cookie sheet.
Press down with fork.
Bake at 350 deg for 10 min.
Roll in crushed candy mix while warm

Applesauce Chocolate Chip Cookies (Grandma Black's)

1/2 c shortening
1 c sugar
1 egg
1 c applesauce
2 c flour
1 tsp cloves
1 tsp cinnamon
1/2 tsp salt
1 tsp baking powder
1 tsp soda
raisins, nuts, chocolate chips (whatever you want)
Bake 400 deg for 10 min.

Perfectly Chocolate Chocolate-Chip Cookies

2 1/4 c flour
1/3 c cocoa
1 tsp baking soda
1/2 tsp salt
1 c (2 sticks) butter, softened
3/4 c granulated sugar
3/4 c packed light brown sugar
1 tsp vanilla extract
2 eggs
2 c (12 oz pkg) choc. chips
1 c nuts (optional)

Heat oven to 375 deg.
Stir together flour, cocoa, baking soda and salt.
In a separate large bowl, beat butter, sugar, brown sugar and vanilla on medium speed until creamy. Add eggs. Beat well. Gradually add flour mixture, beating well. Stir in choc. chips and nuts, if using. Drop by rounded teaspoons onto ungreased cookie sheet. Bake 8-10 min. or until set. Cool slightly, remove from cookie sheet to wire rack. Makes about 5 dozen cookies.
