Fried Rice

1-2 green onion, as desired
2 large eggs
1 tsp salt
pepper to taste
4 tbsp oil for stir-frying
4 c cold cooked rice (we like to use brown rice)
1-2 tbsp light soy sauce

Lightly beat eggs with salt and pepper.
Heat a wok or frying pan and add 2 tbsp oil. When the oil is hot, add the eggs. Cook, stirring, until they are lightly scrambled, but not too dry. Remove the eggs and clean out the pan.
Add 2 tbsp oil. Add rice. Stir-fry for a few min. Stir in soy sauce as desired.
When rice is heated through, add the scrambled egg back into the pan. Mix thoroughly. Stir in green onion. Serve hot.
(We substitute diced ham and chopped broccoli for the onion).
